Food is a big part of culture and identity. For many, food is a way to pass down traditions, reconnect and stay connected to their culture. When cultural food is modified to appeal to a western audience, the cultural aspect of the food is erased.

Changing the flavour or changing its name is changing its history and cultural meaning. It is the whitewashing of food.
